Sandwiches with Sassy AttitudeMaking great, one of a kind sandwiches just involves a sense of adventure and a lot of imagination. Some quick ideas to jazz up a boring sandwich are using lettuce to wrap your sandwich fixings, adding pesto or chutney to the bread instead of mayo or mustard, or using raisin bread instead of regular sandwich bread. Let's look at some other creative suggestions that can transform your next sandwich into the star attraction at the table. Make a Date with Hummus Toast some pita bread on each side, and then carefully use your knife to make a pocket. Use a spoon or butter knife to add some hummus to the inside walls of the bread. Dice up some dates and place them in a bowl. Add some raisins, fresh coriander leaves, and chopped walnuts and mix these ingredients together. Now add a tablespoon or two to each pita pocket. Enjoy this vegetarian special. Peanut Butter/Cranberry Delight Spread peanut butter to the slices of honey wheat or whole bread. Add a light coating of whole cranberry sauce to each bread slice. Now add some shredded lettuce and diced celery to one slice of bread and top it with bread that has just the peanut butter and cranberry sauce. This makes a thick and luscious sandwich that even kids will like. Turkey, Avocado Roll Ups Add a light coat of mayo or salad dressing to a few thinly sliced pieces of turkey. Carefully slice a medium, ripe avocado and place a few small slices on top of the slice of turkey. Add a sprinkle of chopped pecans and a little lettuce. Now roll the turkey into a small bundle and enjoy. You can add chopped onions, bean sprouts, mushrooms or diced tomatoes to your turkey before rolling it up into its round sandwich form. Banana/Raspberry Madness Toast 2 slices of raisin bread and then coat one side of the bread lightly with some powdered sugar. Add ½ cup of a sandwich filling made from a mashed banana, ¼ cup of crushed raspberries (fresh or frozen berries that have been thawed), and ½ teaspoon of cinnamon sugar. Add the filling to the bread without the powdered sugar and enjoy. Mozzarella Pizza Grills Use burrito wraps for this sandwich idea. These will be prepared on the stovetop in a skillet. You can use just a ½ teaspoon of hot vegetable oil in the pan if you want to make your Mozzarella Pizza Grills a little crisper. Create the filling of your choice from the following ingredient list: Mix your ingredient choices together and use about 1/3-1/2 cup to create your sandwich. Heat the oil in the pan and then place your burrito wrap in the pan with the stove on medium-low heat. After about 30 seconds use tongs to flip the burrito over. Now add your ingredients to the burrito. Add a little extra cheese and use a spatula to help you roll the burrito up quickly. The extra cheese will help it hold its shape as you brown the burrito wrap. You can adjust the heat to medium if needed.
