Fun and Foods Make Mealtime a Fantastic Time

Want to eat a folding pizza or some ants? Well hold on to your hats and come to the table because this is just a start of the fun in store for you and your kids. If you have been running a little low on mealtime ideas these tips are sure to bring a smile.

Kids love funny foods and food with fun names, so try to add imagination and whimsy to increase their appetites. Here are some great recipes to try with your family.

Ants at Sea on a Log

Celery stalks washed and cut into 3-4 inch sections
Add peanut butter or cream cheese to the middle of the celery to fill up the hollow
Place raisins or dried cranberries along the top for the ants
Eat as a snack

Finger Salad

Use lettuce leaves to hold the salad.
To each leaf, add some diced apples, mayo, raisins, and pretzels.
Fold or wrap the lettuce leaf around the mixture and eat

Inside out sandwiches

Take 2 lettuce leaves and add peanut butter or mayo
Place one slice of wheat bread on each lettuce leaf; add a light coating of peanut butter or mayo
Slice a banana lengthwise in thin pieces and lay these on one of the bread slices
Place your sandwich together with the lettuce remaining on the outside and enjoy

Springtime Happiness

Slice some apples and pears into wedge shaped pieces.

Melt a can of vanilla or chocolate frosting in the microwave for about 20 seconds or until nicely melted. Stir with a spoon to mix it well.

Use a skewer or fork to dip each section into the frosting and then dip the covered fruit into sprinkles or other toppings like crushed nuts or coconut.

Each topping should be in a separate bowl or on some wax paper.

When you have decorated the fruit sections, place them on a cookie sheet that has wax paper or parchment paper as a liner.

Place your Springtime Happiness fruit in a fridge to cool and harden the frosting.

Folding Pizza Burritos

Is this Mexican or Italian cuisine? Let's just score big with both kids and adults. Use burrito size tortillas for this mealtime special.

Lace some pizza sauce in the centre but do not cover the burrito all the way to the edges. Whole-wheat burritos work well or use the colourful burritos like those green ones made from spinach or the red ones made with tomatoes.

Add some grated mozzarella and cheddar cheeses, shredded lettuce, browned ground beef or any other toppings you like. Heat it in a stovetop pan until cheese begins to melt and bottom of the burrito gets very warm. Fold one side over and press down gently with a spatula. Flip it over carefully so each side gets as brown as you would like.
